Jean-Georges and wife Marja Vongerichten’s modern Korean concept Chi-Q at Three on the Bund hosted a cooking demonstration in September 2014. It was a two-hour session in which Marja and Chi-Q head chef Bichna Yu cooked in front of an audience of 25 while we simultaneously ate dishes being demonstrated. I am not sure that I can replicate this kind of cooking in my own kitchen but inspirational nonetheless for me to actually consider entering my kitchen once in awhile. A unique and intimate experience to be able to meet Marja herself, who is quite lovely and down to earth.

Cooking demonstration included a four-course meal and drink.

Course 1: Doore tofu served in orange peel.
Course 2: Mackerel jorim with daikon in a spicy broth.
Course 3: The juicy medium rare lamb chop with kimchi butter was the highlight of the luncheon. The kimchi butter spread over the well-seasoned lamb was divine. Look for this new dish on the Chi-Q fall menu.
Course 4: Fresh berries with lemongrass sorbet and bokbunja granite to finish.
